YouTube has become the favourite culinary destination for those who are trying to learn cooking and for expert chefs too. Earlier, people were keen to refer recipe books or articles that appeared in housekeeping magazines for tips and tricks to run the kitchen. However, YouTube has now taken that spot as it caters to all sorts of people, from foodies and amateur cooks to seasoned chefs, with a variety of videos and channels related to food. Gold Winner has started a YouTube channel called Hridhya Pachakam where the traditional flavours of Kerala are recreated. Latha Kuniyil, the first woman chef of Kerala, whips up some amazing dishes in this YouTube channel that is already grabbing attention.

The first episode of Gold Winner Hridhyam Pachakam featured a special item called Madhura Ada Porichathu. Young playback singer Vijay Yesudas was the guest in this episode. The delightful first episode was so promising that those who are interested in cooking should check out this channel.

Chef Latha had fried the madhura ada using Orysa rice bran oil. 200 gms all purpose flour, 100 gms sugar, 1 tsp cardamom powder and 200 gms grated coconut are the other ingredients that were used to prepare this fabulous dish.

Benefits of rice bran

Chef Latha, while mixing the dough by adding Orysa rice brans, explains why rice bran oil is better than other oils. “It is said that rice bran oil can boost the immunity power of children. That is why our ancestors used to make children eat rice bran paste. Besides, rice bran would help nursing mothers produce more milk,” says the chef. Latha added that new mothers were given a special dish made by mixing rice bran with grated coconut and jaggery. Later, lots of experiments were done by the scientists to produce rice bran oil which is equally nutritious. Not just for boosting immunity, rice bran oil is best for easing digestion too. Meanwhile, chef Latha gives a tip that the all purpose flour should be nicely mixed with the oil to increase the taste of the dish.

Hearty relation

The first episode of Hridhyam Pachakam also saw some interesting interaction between the chef and her guest. The singer said that he had recently moved to a new house and now he shares a building with the chef. Vijay lives in the third floor of the apartment complex while chef Latha is a resident in the fifth floor. The singer expressed hope that he could now enjoy delicious dishes at the chef’s house. Moreover, Vijay heaped praises on chef Latha saying that the restaurant that she works now became extraordinary after she had taken over the kitchen.

To prepare madhura ada, Orysa rice bran oil is heated in a pan. The chef, meanwhile, added that using oil is better than ghee as the snack wouldn’t be too oily or heavy. Latha didn’t forget to give some value tips to her viewers that could help them in the kitchen. The chef said that grated coconut shouldn’t be added into hot oil and that sugar should be added always in the end. Spices too could be added towards the end of the cooking process.
