Sweet and spicy watermelon curry

It is often during harsh summers that watermelons make an entry into our household. This watery fruit is extremely refreshing and can easily quench thirst. However, not many know that tasty curry could be made using the sweet watermelon.

This recipe is quite popular in Rajasthan. The watermelon curry is in fact spicy and a bit sour as well. Check out the interesting recipe of watermelon curry that tastes best with chapathi or roti.

Ingredients
1 watermelon (seeds removed and cubed)
2 tbsp oil
3 garlic cloves
1 tbsp mustard
¼ tsp turmeric powder
½ tsp chilli powder
1 tsp coriander powder
Lemon sized ball of tamarind
Salt as required
2 tsp chopped coriander leaves

Preparation
Make 1 cup juice using the watermelon cubes and save the rest for later
Heat oil in a pan and splutter the mustard seeds
Sauté the finely chopped garlic
Add the chilli powder, turmeric powder, and coriander powder
Sauté until the raw smell is gone
Add the watermelon juice and salt as required
Then add the tamarind water as well
Allow this gravy to boil well
Add the rest of the watermelon cubes and cook for 5 more minutes
Garnish with chopped coriander leaves.
