Bebinca
It is a sumptuous dessert layered with egg yolk and coconut milk. This rich Portuguese dish is served as a delicacy during weddings feasts and Christmas celebrations in Goa. In the olden days, bebinca was made in a 'dhond’, a huge earthenware pot, and was cooked slowly over wooden fire with coal on the lid of the vessel.
Pork vindaloo
This fiery hot pork curry is synonymous with Goan cuisine. Pork pieces are marinated with a spicy mix overnight before cooking the vindaloo. Like pickle, Vindaloo can be kept for many days without refrigeration.
