The idea of seasonal food is more significant than we think. Earlier this was a given. These days more emphasis is given to local and seasonal food. Whatever is readily available around our environment can be considered good produce, says celebrity Chef Suresh Pillai. We know about mango season in Kerala. So it is very important that green mangoes should be consumed during that season. When there is an abundance of drumsticks, make full use of them. The same goes for yam, Pillai says.

Though we might get all kinds of produce all year round, the best time to consume them will always be when they are in season.
