The idea of seasonal food is more significant than we think. Earlier this was a given. These days more emphasis is given to local and seasonal food. Whatever is readily available around our environment can be considered good produce, says celebrity Chef Suresh Pillai. We know about mango season in Kerala. So it is very important that green mangoes should be consumed during that season. When there is an abundance of drumsticks, make full use of them. The same goes for yam, Pillai says.

Though we might get all kinds of produce all year round, the best time to consume them will always be when they are in season. So if you are in Kerala, make sure to have mangoes only when they are in season. Currently, people all over the world are following this concept of including produce that is in season in their daily diet. In some fine restaurants in England, if tomatoes are out of season, their menu will feature tomato-free dishes. Can we even imagine a scenario where tomatoes and onions aren’t in season here?
