Ibrahim Kutty prepares special mani puttu

mani puttu

'Mani puttu' is a traditional steamed dish that is prepared using a special 'sevanaazhi' or mould. Actor-vlogger Ibrahim Kutty, in his latest vlog, prepares the delicious dish for his viewers. He says mani puttu is a traditional iftar speciality that can be enjoyed with creamy coconut milk and sugar.

Meanwhile, non-vegetarians can try spicy mutton dishes, varutharacha chicken (chicken cooked in spiced coconut paste), or beef curry with mani puttu. Ibrahim Kutty recalls how he enjoyed this dish with his friends whenever mani puttu was made at his ancestral home in Vaikom.

He adds that this is one of the favourite dishes of Renji Panicker and Suresh Gopi. Ibrahim Kutty reveals that Renji Panicker often asks him to invite him over when mani puttu is prepared. Try out his simple recipe of soft mani puttu.

Ingredients
2 cups rice flour
2½ cups water
1 tbsp coconut oil

Preparation
Boil water with salt and coconut oil
Cook the rice flour by adding it into the boiling water
Stir well when the rice flour is cooked nicely
Take it off the flame and allow it to cool down
Now knead it into soft dough while the flour is still warm
Place the sevanaazhi (mould) in a flat bottomed vessel
Spread rice flour in the vessel
Fill the dough into the sevanaazhi and press the mould
As the dough falls into the vessel as thin strands, keep throwing the rice flour on it
Mix and coat the rice strands well with rice flour
Put the strands into a sieve to tap off the excess rice flour
Fill a regular cylindrical puttu kutti with these rice strands
Cook in steam
Pour a ladle full of coconut milk into the cylinder while hot mani puttu is still inside
Now transfer the mani puttu, drenched in coconut milk, into a plate
Pour more coconut milk if required
Enjoy the mani puttu while hot.
