Bread malpua- sweet and crispy golden pancakes

Malpua and rabri are like the king and queen of Diwali sweets. Malpuas are those sweet stuffed pancakes that has crispy edges and a golden hue. It is usually made with maida and mawa (khoa). However, you can go for a faster preparation method using soft white bread to make the dough.

Ingredients
For malpua

8 slices of white bread
1/4 cup milk
2 tbsp ghee
1 cup khoa
2 tbsp sugar
1 tsp sliced cashew nuts and almonds, sliced
1 tsp sliced pistachios

For syrup

1 cup sugar
1 cup water
1/2 tsp cardamom powder
A pinch of saffron

Preparation
Heat ghee in a pan
Fry cashew nuts and almonds
In a mixing bowl, mix khoa, sugar and the fried nuts, set aside
Boil sugar and water in a sauce pan
Add cardamom powder and saffron when the sugar dissolves, stir well and set aside
Cut off the crust from the bread and tear it to tiny pieces
Add milk to the bread and make it into a dough
Roll the dough into equal sized balls
Take two balls and press them lightly to flatten it
Spoon in the filling to the middle of one of them
Cover with the other and seal the edges
Heat ghee in another pan and fry the malpua until both the sides turn golden brown
Meanwhile, heat the sugar syrup on low flame
Add the fried malpuas to the sugar syrup
Flip it to coat both the sides in sugar syrup
Let it sit for a while before serving
