Make red wine in just 14 days

Wine must be one of first beverages made by the human race to add some extra 'kick' to the festivities and celebrations. The red wine has been mentioned in the ancient scrolls and also in the great epics and Bible. Here is a simple recipe to prepare red wine within just 14 days.

Ingredients
3 kg black grapes
1.5 kg sugar
200 gms wheat grains
3 Thippali (long pepper)
3 cinnamon sticks
3 cardamom pods
4 cloves
A small piece of ginger (crushed)
200 gms beetroot
1 tbsp yeast
1 tsp sugar

Preparation
Wash the grapes in warm water
Dab the washed grapes with a clean cloth
Put the grapes in a mud jar
Crush the grapes using a wooden spoon
Add sugar and mix well
Add thippali, cinnamon, cardamom, cloves and crushed ginger
Peel the beetroot and boil it in some water for 2 -3 minutes
When the water in which the beetroot has been boiled cools down, add it into the mud jar (the beetroot water adds color to the wine)
In a bowl mix yeast and sugar in warm water
When the yeast rises, add it into the jar
Add wheat grains and mix well
Place the lid on. However, it shouldn't be tightly shut
Seal the jar with a piece of clean white cloth
Stir the concoction for 10 days at the same time using a wooden spoon

Notes
Do not use metal vessels. Always use wooden spoon to stir the wine. Use boiled and cooled water. Beetroot was is added just for the color and not for flavour. Semolina or paddy grains could be used instead of wheat. Plump grapes used to extract juice are used here. So there is no need to add extra water.
