Not your regular Christmas dessert but hey, coffee is always a good idea. Try baking this coffee cake at home without eggs.
Ingredients
1 tbsp instant coffee powder
35ml boiled water
300ml milk/soya milk
2 tsp cake gel
¼ kg all purpose flour
2 tsp vanilla powder
1 ½ tsp baking powder
300ml wipping cream
Chocolate ganache, coffee powder as required
Preparation
Preheat the oven to 170°C
Mix the coffee with boiled water then add milk and cake gel and blend well
To this, sieve in the flour, vanilla powder, and baking powder and blend well
Line the cake tin with butter paper and pour the cake mixture
Bake in the preheated oven for 25-30 min
Cut the cake into 3 layers
On the first layer spread the whipping cream and on top of that spread chocolate ganache and sprinkle coffee powder
Assemble all the three layers likewise and decorate the top layer as you wish.
