Coffee nutty cake

Coffee and cakes always go well together but how about we combine the two! The subtle flavour of coffee makes this cake stand out. Chopped cashews add texture and richness to the cake, which could make your Christmas extra special.

Ingredients
For the sponge:
½ cup warm milk
2 tsp instant coffee powder
3 eggs
2 cups all purpose flour (maida)
1 tsp baking powder
A pinch of salt
¾ cup cashews (crushed)
1 cup softened butter
2 cups powdered sugar
1 tsp vanilla essence
For frosting:
1 cup brown sugar
2 tbsp milk
2 tsp instant coffee powder
1 tbsp rum
1 cup cashew (crushed)

Preparations
Pre-heat the oven to 180°C
Mix the instant coffee powder in warm milk
Beat the eggs well
Pass the all purpose flour, baking powder and salt through a sieve together
Add the crushed cashews into it and mix well
In a bowl add the powdered sugar and butter
Beat it well
Add the beaten eggs slowly into it and beat everything well
Add the vanilla essence and mix well
Into this mixture, add the sieved all purpose flour and milk mixed with coffee powder consecutively
Fold everything well together
Pour the cake batter into a greased cake tin 
Bake it in the pre-heated oven
For the frosting, mix brown sugar and milk in a bowl
Keep it over a low flame and stir the mixture
Take it off the heat before the brown sugar melts completely
Add instant coffee powder and mix well
Add rum and crushed cashews
Mix well
Smear this frosting over the cake.
