Special idi ada for iftar

Ida ada is a tasty steamed dish which would create a riot of flavours on your palette. You could easily impress your guests with this unique dish at your next iftar party. Try out the recipe of idi ada which is incredibly easy to make.

Preparation
Dry roast coriander seeds, dried chillies, Kashmiri chillies, fennel seeds, cumin, grated coconut, cinnamon and cloves and grind it into fine powder.
Wash the meat and drain well.
Marinate the meat with the masala powder, ginger paste, garlic paste and salt as required.
Mix everything well together and keep it aside for at least 15 minutes.
Pour water as required and cook well until it gets reduced.
Heat oil and sauté onions and green chillies .
Add the cooked meat and roast well.
Into it add the garam masala, coriander leaves and salt as required. This is the filling.
Boil water with salt in it. Add this water in small amounts into the pathiri/rice powder and mix it into dough.
Rub some oil on palms before mixing the dough as it may stick onto the palm.
Transfer the dough into the idiyappam mould and press it onto a plantain leaf rubbed with oil.
Place the previously prepared filling on one side of the pressed dough and fold the plantain leaf.
Cook in steam.
Serve only after the dish has cooled down as the hot ida ada may be sticky.
