Vishu special curry

Make this Vishu extra special by making this delicious coconut-based curry using local ingredients like drumsticks, jackfruit seeds and mangoes that are easily available in your backyards. Check out the pretty simple recipe of the curry that could be the star of your Vishu sadya (feast).

Ingredients
2 drumsticks (cut into 2 inches pieces and then split in half)
10 jackfruit seeds (sliced)
½ tsp turmeric powder
1 ½ tsp chilli powder
1 tsp coriander powder
2 cups second extract of coconut milk (from 1 coconut)
Salt as required
1 mango (not too sour, cut into big square pieces)
1 cup first extract of coconut milk
1 tbsp coconut oil
½ tsp mustard seeds
2 shallots (chopped)
2 dried chillies (split)
1 bunch curry leaves

Preparation
Into a vessel add the drumsticks, jackfruit seeds, turmeric powder, chilli powder and coriander powder
Pour the second extract of coconut milk and cook
When they are half cooked, add the mango pieces and salt as well
Allow the contents to cook nicely
Now add the first extract of coconut milk
When the gravy begins to boil, take the curry off the flame
Heat coconut oil in a pan and splutter the mustard seeds
Roast the shallots, dried chillies and curry leaves
Pour this tempering into the curry
Mix well.
