Green spinach and dal thoran

This Karkidakam, aim for healthy not compromising on the taste; this spinach stir fry is just that. It counters the chill and generates enough heat, thanks to the ginger, garlic and chillies. Try this with roti or rice.

Ingredients
2 tsp, coconut oil
1 small tsp, mustard seeds
½ tsp, black gram/ural dal
2 dried red chillies
Curry leaves, as required
1½ tsp ginger, finely chopped
1½ tsp garlic, finely garlic
4 green chillies, finely chopped
2 big onions, finely chopped
Salt, as required
200gm green spinach finely chopped
½ tsp turmeric powder
Curry leaves, as required
50gm split Bengal gram, boiled
½ tsp pepper powder

To grind roughly

½ grated coconut
1 tsp, cumin seeds
5 shallots
1 green chilli

Preparation
Heat oil in a pan. Add black gram, dried red chillies and curry leaves. Saute well
Add ginger, garlic, green chillies to it and sauté
After the raw smell is gone, add onions and salt. Again, sauté this mixture for a while
When the onions become golden brown in colour, add turmeric powder along with the spinach
Now crush and the coconut, cumin seeds, shallots and green chilli. Add this to the mixture. 
Add the boiled split Bengal gram and pepper powder to this, and take off the flame
