Kani ada

The auspicious Vishukani on the day of Vishu is backed by the ceremonial Vishu ada; it is the best start you can ask for on the glorious day.

Ingredients
2 cups ground white rice
¾ cup water
Salt, as needed
200g jaggery grated
1½ piece coconut grated

Preparation
Lightly heat the ground rice, add salt and water, and make it into a semi loose dough
Make into small balls and spread onto cut plantain leaves to the shape of ada (circular) 
Wet your fingertips to spread the mix evenly on all its sides
Mix the coconut with jaggery. Take a little of it and place in the centre of the ada
Seal both sides of the ada 
Steam the ada until it is cooked well
