This citrus cake, crumbly and divine, is a game changer! Visibly soft and unassuming, it has heartwarming flavours of orange and lemon tucked inside every crevice.

Ingredients

200 gms maida
200 gms butter
250 gms sugar powder 
3 eggs separated
1½ tsp baking powder  
1½ tsp vanilla essence
½ cup orange juice 
Juice of 1 lime
2 tbsp orange rind

Preparation

Beat butter and sugar till light and fluffy
Add egg yolks and continue beating along with vanilla, orange and lemon juices
Sieve maida with baking powder
Fold into the batter alternately with stiffly beaten egg whites 
Pour batter into a greased bundt tin and bake at 180°C for 30 min
