Aswini Geetha Gopalakrishnan, the sous chef at the Malabar Café in Grand Hayat Hotel, Kochi has created this simple version of the classic coconut laddu. Coconut is used generously in the Kerala cuisine so why not use it to make dessert.

Here is the easy recipe of delicious coconut laddu.

Ingredients
2 ½ coconut (grated)
300 gm ghee
100 gm cashews
50 gm raisins
300 gm roasted semolina
300 gm sugar
10 cardamom pods

Preparation
Heat ghee in an uruli or a vessel
Add the cashews and rains and fry them until golden
Keep the fried cashews and raisins aside
Into the same ghee add the grated coconut
Stir until the coconut is roasted well
Add the semolina and roast until it turns light brown in color
Into it add the sugar and keep stirring until all the ingredients are mixed well into a sticky consistency
Add the powdered cardamom and fried cashews and raisins
Make small balls of tasty ladoo when the mixture is still warm.
