Plantain skins shouldn't be thrown away as they are store houses of fibres and other essential nutrients. Delicious thoran (stir fry) and cutlets could be easily made using the plantain peel. However, make sure that you use the skin of organically grown plantains. Check out the easy recipe of plantain peel cutlets.

Ingredients
1 cup plantain peel
½ cup potato (boiled and mashed)
2 tsp onion (chopped)
1 tsp garlic (crushed)
1 tsp chilli powder
½ tsp turmeric powder
1 tsp salt
1 tsp corn flour
Bread crumbs as required
All purpose flour paste as required
Oil to fry

Preparation
Half cook the chopped plantain peel with some turmeric powder and salt
Heat oil in a pan and sauté onions, garlic, chilli powder, turmeric powder and salt
Add the plantain peel and mashed potato
Mix well
Cook for 5 minutes with the lid on
Into it add corn flour and mix
Scoop some of this mixture and press it on your palms in the shape of cutlets
Dip the cutlets in the all purpose flour paste
Cover these with bread crumbs
Deep fry in hot oil until the cutlets are golden brown on both sides
Serve hot with tomato ketchup.
