Kumbilappam is a delicious sweet snack that is usually made using ripe jackfruit. Here is an easy recipe for the steamed snack made with ethapazham or big bananas instead. This is a healthy evening snack.
Ingredients
1 big banana
1 cup roasted rice flour
1 cup grated coconut
¾ cup jaggery
1 tsp cardamom
¼ tsp cumin powder
1 tsp butter
½ cup water
Preparation
Steam the big banana
Peel the banana and take out the seeds
Mash the cooked banana nicely using a spoon
Prepare jaggery syrup by boiling jaggery with water
Add butter, cardamom and cumin powder
Mix well
In a bowl, mix the rice flour and grated coconut
Into it add the jaggery syrup and mashed banana
Mix well into soft batter
Make cones with bay leaves and fill in the batter
Cook in steam for at least 15 minutes.
