Kerala-style spicy chicken roast for this Ramadan

This spicy chicken roast requires basic ingredients and can be cooked pretty easily. Check out the recipe of Kerala chicken roast that tastes amazing with rice, appam or roti.

Ingredients
½ kg chicken
2 tbsp soy sauce
1 tsp chilli powder
1 tsp pepper powder
1 tsp coriander powder
½ tsp garam masala
1 tsp ginger-garlic paste
3 onions (thinly sliced)
1 potato (cut into thin disks)
1 tbsp tomato ketchup
Salt as required
Oil

Preparation
Marinate the chicken pieces with chilli powder, pepper powder, coriander powder, garam masala, ginger-garlic paste and soy sauce
Keep the marinated chicken in the fridge for at least an hour
Heat oil in a pan and fry the onion slices
In same pan, fry the potatoes as well
Keep them aside to be used later
Cook the marinated chicken for ten minutes with the lid on
Add half of the fried onions and potatoes (save the rest for garnishing)
When the chicken is cooked well add the tomato ketchup and salt as well
Mix well so that the gravy doesn€™t stick to the bottom of the pan
Pour enough water and cook
Take the chicken roast off the flame when the gravy turns dark brown in colour
Garnish with fried onions and potatoes.
