Chakkakkuru olarthu / Mezhukkupuratti

Jackfruit seeds are delicious. Period. But not many know of this; a zesty stir fry made with these is just the dish that has all the local flavours, and tastes out of this world.

2 cups jackfruit seeds, hard peel off with red peel on, sliced into thin pieces
4 dried red chillies
4 shallots
8 garlic cloves
1½ tsp pepper seeds
Salt as required
2 dsp coconut oil 
1 cup water

In a vessel, cook jackfruit seed slices along with water and salt
After it is cooked, keep aside. Take care not to overcook
In a pestle and mortar, grind red chillies, pepper seeds, garlic and shallots coarsely together
In a pan, heat 2 dsp coconut oil, and put the ground mix in it. Saute well 
Add the cooked jackfruit seeds to this
Fry for a while, until the slices become slightly crisp
Take it off the flame. Savour it with some hot rice
