Kumbilappam or cone shaped sweet snacks are extremely popular in Kerala and are prepared using a variety of ingredients. This delicious and soft kumbilappam is made using ethappazham or big bananas that are commonly seen in our households. Here is how you could make tasty banana kumbilappam in fragrant bay leaf cones.
1 cup jaggery (shaved)
½ cup water
1 tsp ghee
1 cup grated coconut
1 cup puttu powder
½ tsp cardamom powder
1 cup big banana (steamed and mashed, seeds removed)
Melt the jaggery by adding water as required to prepare the syrup
When the jaggery syrup begins to thicken up, add ghee and mix well
Mix grated coconut and puttu powder well using fingers
Mix cardamom powder in the jaggery syrup. Add this flavored jaggery syrup into the puttu powder and mix without forming any lumps
Now add the mashed big banana and mix well. Make cones with the bay leaves and fill in the kumbilappam mix
Cook in steam
Serve after the kumbilappam has cooled down.
