Chakka ada - Jackfruit dumplings with the goodness of bay leaves

Ila ada has always been an after-school snack across generations. The seasonal variant, jackfruit ada also enjoys a good fanbase. You can easily enhance the taste of this wonder food by simply replacing the plantain leaf covering with bay leaves. 

Ada that is made using bay leaf or vayana ila have many names across the states.  Theraliyappam and Poocha puzhungiyath are some of those. Steaming with bay leaves gives it a distinct flavour, which will make you grab a handful for sure.

Ingredients
Mashed jackfruit
Jaggery syrup
Grated coconut
Rice flour
Cardamom powder
Vayana leaves (bay leaves)

Preparation
Pour jaggery syrup to a pan.
Add grated coconut and saute well
When it boils, add mashed jackfruit and mix well
Keep aside the pan
Add rice flour to it and mix it well
Add cardamom powder
Mix thoroughly until a thick batter is formed
Pour the batter on a vayana leaf (bay leaf)
Spread it evenly using a spoon and fold it.
Steam these folded leaf for around 30 minutes or until the Ada is cooked
