Meat pattichu varathathu

No festivities are complete without a main meat dish. This pattichu varathathu is cooked in classic Kerala style and uses a punchy combination of spices to give you a mouth-watering preparation.

Ingredients
500 gms meat
2 potatoes cut into cubes
6 garlic cloves
1½ teaspoon chopped ginger
1 teaspoon chopped garlic
1 tablespoon coriander powder
½ tablespoon chilli powder
¼ teaspoon turmeric powder
¼ teaspoon pepper powder
½ teaspoon aniseed
1 inch cinnamon
2 cloves
1 tablespoon vinegar
2 cups hot water
1 teaspoon salt 
Seasoning:
2 tablespoon oil
¼ teaspoon mustard 
2 tablespoon sliced button onions

Preparation
Wash and clean the meat and cut into large cubes
Grind the chilli, coriander, turmeric and pepper powders along with the sliced garlic, aniseed, cloves and cinnamon till you get a fine paste
Marinate the meat with this ground paste
Into the marinade, add the chopped ginger, vinegar, and salt and keep this aside for about an hour
Cook the marinated meat in two cups of hot water and when it is well done, add the potatoes and garlic cloves
When the potatoes are well cooked and the gravy has thickened, remove from the fire and keep aside
In a heavy bottomed pan or wok, heat the oil and throw in the mustard seeds
When it splutters, add the button onions and stir till it has browned lightly
Add the cooked meat and potatoes into the wok and stir gently
Make sure the potatoes do not crumble
When the masala leaves the side of the pan, remove from the fire and serve hot.
