Groundnut Chikki

An easy-peasy recipe for crunchy peanut brittle!

Ingredients

1 cup groundnuts, roasted

1½ cup sugar

1¼ tsp butter
1¼ tsp bicarbonate of soda

Preparation

Crumble groundnuts into small pieces.
Brown sugar in a heavy skillet and add butter
Add bicarbonate of soda. 
When the mixture begins to froth, add the crumbled groundnuts. 
Remove from fire and mix well.
Pour into a greased tray or onto a marble slab and level the surface with a rolling pin.
Cut into desired shapes before the mixture hardens. 
Store in airtight containers.

Notes

Prolonged exposure to air will turn the chikki soggy.
