Jackfruit is sure the rage during the summers in Kerala, but have you tried the tender jackfruit stir-fry? Its soft innards are perfectly cooked and then sauteed with coconut and other condiments to perfect the savouriness.

Ingredients

3 cups tender jackfruit (boiled in very little water along with salt and turmeric, shredded)

½ tsp cumin seeds

2-3 red chillies

½ tsp crushed red chilli

1 cup grated coconut

2 dsp coconut oil

½ tsp mustard seeds

1 tsp raw rice

1/4 cup shallots or onion, sliced thin

Preparation

In a pan, heat oil

Pop the mustard seeds and follow it up with rice and red chillies

Add the sliced onion and saute well

Now, grind the coconut with cumin seeds and crushed red chilli adding no water

Add this to the pan and saute well with the coconut

Now add the cooked and shredded jackfruit

Blend well with the coconut mix and let it stay for two minutes

Take off the flame and delicious tender jackfruit stir-fry is ready to be relished
