Sharkkaravaratti

There's no doing away with this sweet banana chips coated with jaggery and mild spices. It's not as difficult to make as you think, if you follow our instructions closely.

Ingredients
½ kg plantains, not too mature
¼ kg jaggery
½ tsp dried ginger powder
1 tsp cardamom powder
2 tsp rice flour (if needed)
Oil, for frying


Preparation
In a hot pan, pour oil
Drop the banana pieces into the hot oil (banana slit lengthwise and chopped into smaller pieces)
Saute until the banana pieces turn brown in colour
Pass them to a strainer
Dissolve the jaggery in 1 ½ cups of water and start heating it
Wait till the jaggery bubbles up, thicken and forms a one-line thread consistency
When it gets to that stage, add the fried banana pieces
Stir continuously until the mixture gets warm so that it doesn't stick to the pan
Once it's warm, add cardamom powder and dried ginger powder
Toss in the rice flour as well
Mix well until all ingredients blend with the pieces
