Stuffed meat brinjal

Brinjal is at its versatile best when stuffed with cooked meat and deep fried to a crispy snack.  

Ingredients

5 brinjals

1 large onion, sliced fine

1 tsp ginger minced

2 tsp green chillies

1 tsp garam masala

2 tbsp oil + to deep fry

1 cup minced meat

1 egg

½ cup bread powder

Salt, as required




Preparation

Steam-cook the brinjals in a steamer. Once they turn soft, scoop out their insides and keep aside

Heat the pan and add oil

Add 2-3 tbsp sliced onion, green chillies and ginger. Saute well.

Now, add the minced meat and blend well

Add enough salt and let it cook for a few minutes

Add garam masala

Take the brinjal pulp kept aside, chop them up and add 2 tbsp to the pan

You may add a tsp of maida if the mixture seems too crumbled

Now, beat the egg in a bowl

Take some of the prepared masala, stuff the brinjals with it, dip the stuffed brinjal in beaten egg, roll in bread powder and deep fry in oil
