Andhra-style egg curry

Egg curries are amazing combination with appam, chapathi or roti. Check out the recipe of special Andhra egg curry which is spicy and has a unique flavour.

Ingredients
4 boiled eggs
Salt as required
½ tsp turmeric powder
2 tbsp oil
½ tsp mustard seeds
2 dried chillies
1 sprig curry leaves
1 bay leaf
½ cup onions
1 inch piece of ginger
1 tbsp garlic
1 tbsp tomato paste
1 tsp cumin powder
1 tbsp coriander powder
1 tbsp chilli powder
1 cup water
1 tbsp turmeric water
1 tsp sugar

Preparation
Marinate 3 eggs with salt and turmeric powder for 5 minutes
Fry these marinated eggs in a tablespoon of oil
Keep these eggs aside to be used later
Heat 1 tablespoon oil in the same pan
Splutter the mustard seeds
Sauté dried chillies, curry leaves and bay leaf for 30 seconds
Add the onions, ginger and garlic
Sauté well
Now add the tomato paste (or ½ cup tomatoes)
Into it add cumin powder, coriander powder and chilli powder
Mix well until the raw smell of the powders is gone
Pour in the tamarind water and some normal water as well
Add salt and sugar as well
Allow the gravy to boil well
Cut the boiled egg that was saved earlier into small pieces and add into the gravy
Add the fried eggs as well
Give everything a good mix
Andhra egg curry tastes best when served hot.
