Tomato-coconut chutney

Try this tangy and spicy tomato-coconut chutney with dosa/idli if you are bored of having the regular chutney. The chutney can be prepared pretty easily using simple ingredients that are commonly available in your pantry.

Ingredients
2 medium sized tomatoes
1 onion
1 small piece ginger
3 dried chillies
2 tbsp coconut oil
Salt as required
½ cup grated coconut
For tempering
1 tsp oil
½ tbsp mustard seeds
Curry leaves as required
2 dried chillies

Preparation
Heat coconut oil in a pan and sauté the dried chillies
Sauté onions and ginger
Add the tomatoes and sauté until they are nicely cooked
Turn off the flame and allow this mixture to cool down
Grind the tomato mix with grated coconut, salt and some water
For the tempering, heat oil and splutter the mustard seeds
Roast the curry leaves and dried chillies
Add this tempering into the tomato chutney
Mix well and enjoy with dosa/idli.
