Egg and carrot sandwich

Carrots are storehouses of vitamins, minerals, and fibres as well. It is filled with vitamin C that helps in increasing the immunity. Besides, having vitamin C is an excellent antioxidant.

Kids usually don't enjoy traditional carrot dishes like thoran (stir fry) or spicy curries. Here is a simple recipe for egg and carrot sandwich which tastes amazing and can be made in a jiffy.

Ingredients

8 slices of bread
3 eggs (boiled)
2 big carrots (grated)
3 tbsp mayonnaise
¼ tsp pepper powder
Salt as required

Preparation

Add 2 tbsp butter into hot pan
Sauté the grated carrots
Into it add crumbled eggs
Now add salt and pepper
Mix well
Add the mayonnaise when this mixture is still warm
Spread some tomato ketchup on the bread slices
Place the egg and carrot mixture on the bread
Now add a cheese slice
Finally, place another bread slice on top
Toast the sandwiches on a hot pan greased with butter
Serve hot with tomato ketchup or coriander chutney.
