Creamy cauliflower curry or malai gobi is a delicious North Indian delicacy that tastes amazing with chapathi or roti. Here is how you could make the perfect malai gobi using fresh coconut milk.

Ingredients
250 gms cauliflower
1 cup coconut milk
½ cup cashews
2 tbsp oil
1 onion
2 green chilies
6 cloves garlic
1 big piece ginger
4 cardamom pods
1 tsp cumin
½ tsp pepper powder
¼ tsp Kasuri methi
1 tsp lemon juice
Coriander leaves

Preparation
Boil the cauliflower florets with turmeric powder and salt for 2 minutes
Grind half of the cashews with some coconut milk
Mix this thick paste with the rest of the coconut milk
Heat oil in a pan
Saute the onions, green chilies, garlic and ginger
Grind this mixture into a fine paste in a mixer jar
Into the same pan add the cardamom pods and cumin
Saute them lightly until they release flavor
Into it add the onion paste
Saute well
Now add the half cooked cauliflower florets
Mix well
Add the pepper powder, Kasuri methi (dried fenugreek leaves) and half cup water as well
Cook until the water reduces
Now add the cashew-coconut milk
Cook until the gravy is thick and creamy
Turn off the stove and add the lemon juice
Give everything a good mix
Garnish with chopped coriander leaves
Tastes best when served hot.
