4 medium potatoes
2 medium onions
Salt and pepper according to taste
In a small bowl beat 5 eggs and add
salt and pepper.
Cut onions and potatoes into thin
In a pan add half cup of olive oil or
any vegetable oil and fry onions and potatoes in medium heat. Add
some salt to taste. When the onions become caramelized and potatoes
are cooked, remove it from pan and drop this mixture into the egg
bowl. Allow to rest 10 minutes.
Pour everything into a pan with two
tablespoons of oil and cook on a medium heat. Using a spatula, shape
the omelette into a cushion
When almost set, invert on a plate and
slide back into the pan and cook a few more minutes.
Invert two more times, cooking the
omelette briefly on each side and pressing the edges to keep the
cushion shape. Slide on to a plate and cool for 10 minutes before
