Local fish curry

Fish curry is a staple in Kerala and there are umpteen varieties of it here. Check out this recipe of fish curry that tastes even better than the ones that are served in local hotels.

Ingredients
6 fish fillets
1 cup first extract of coconut milk
1 cup second extract of coconut milk
1½ tbsp chilli powder
¼ tbsp turmeric powder
½ tbsp coriander powder
6 tbsp coconut oil
Salt as required
½ tsp mustard seeds
2 cups water
1 tbsp crushed ginger-garlic
Curry leaves as required
1 small tomato
1 large onion
2 green chillies (split)

Preparation
Heat 4 tbsp coconut oil in an earthen chatty
Lightly sauté the onion, tomato and green chillies
Add ¼ tsp turmeric powder, ½ tsp coriander powder and 1½ tbsp chilli powder
Sauté until the raw smell of the powders are gone
Turn off the flame and allow this masala to cool down
Extract the first and second extract of coconut milk
Grind the previously prepared masala along with the second extract of coconut milk in a mixer jar
Pour this into the earthen chatty
Add 1 cup water into the mixer jar, rinse it and pour it into the chatty
Boil the gravy
When bubbles begin to appear, add the fish fillets
Cook for 5 minutes
Now add the first extract of coconut milk
Meanwhile, heat 2 tbsp coconut oil in a pan
Splutter the mustard seeds
Sauté crushed ginger-garlic and curry leaves
Add this tempering into the fish curry
Mix gently and serve.
