Mathanga kumbilappam

'Kumbilappam' is a traditional steamed snack that is usually cooked with ripe jackfruit or bananas. However, not many know that tasty kumbilappam can be easily prepared using a ripe pumpkin that adds the perfect sweetness.

Pumpkin kumbilappam could be made using regular ingredients that are commonly available in your pantry. The soft kumbilappam can be eaten as a filling breakfast or an evening snack. It is healthy, too, as the snack is cooked in steam. Here is the recipe for delicious and soft pumpkin kumbilappam.

Ingredients
1¾ cups pumpkin (cooked)
2 cups semolina
½ cup jaggery syrup
1 pinch salt
1 cup grated coconut
15 cashews (fried in ghee)
¼ cup coconut shards (fried in ghee)
1 tbsp ghee
Cardamom powder as required

Preparation
Mix all the ingredients together 
Fill the mix in bay leaves
Cook the kumbilappam in steam.
