Vellarikka-manga curry

Cucumber and raw mango curry is a traditional Kerala dish that tastes spectacular with steaming rice. It is light on the stomach and aids digestion as well. Here is a very simple recipe for vellarikka-manga curry.

Ingredients

2 cups local cucumbers (chopped)
½ tsp turmeric powder
1 tsp chilli powder
1 tsp salt
Water as required
Half raw mango
1 cup grated coconut
1 tsp cumin
½ tsp turmeric powder
1 tbsp coconut oil
1 tsp mustard seeds
6 shallots
1 dried chilli
1 sprig curry leaves

Preparation

Cook cucumber with turmeric powder, chilli powder, salt, and water
Add the raw mango when the cucumber is almost done
Grind the grated coconut with cumin and turmeric powder
Add this coconut paste into the curry
Cook for two more minutes and turn off the flame
Heat coconut oil and splutter mustard seeds
Roast the dried chilli, shallots, and curry leaves
Pour this tempering into the curry
Mix well.
