Spicy and tangy tomato chutney

This delicious tomato chutney is a humble yet fabulous side dish with hot rice. Here is the very simple recipe of tomato chutney.

Ingredients
15 shallots (sliced)
1 tomato (diced)
4 cloves garlic
4 red chillies
1 small piece tamarind
A pinch of asafoetida powder
Salt as required
Oil

Preparation
Heat 2 ½ tbsp oil in a pan and sauté the tomato
Add the garlic and sauté
Transfer them into another plate
Fry the red chillies in the same oil
Keep it aside
Now sauté the shallots until brown in colour
Into it add the tamarind
Mix well and turn off the flame
Crush the sautéed red chillies with salt
Add the tomato and garlic and crush
Transfer these into another plate
Now crush the shallots and tamarind
Mix this with the previously crushed chilli, tomato and garlic mixture
Into it add a pinch of asafoetida and salt as well
Mix well
Add 1 tsp fresh coconut oil into the chutney
Give everything a good mix.
