Coconut cake

A soft and moist cake can be made with coconut oil and coconut milk. Check out the pretty simple recipe for delicious coconut cake.

Ingredients

¼ cup coconut oil
½ cup milk
¼ cup first extract of coconut milk
½ cup sugar
1¼ cup all-purpose flour
½ tsp salt
¾ tsp baking soda
1 tbsp apple cider vinegar
1 tsp coconut essence
½ cup desiccated coconut

Preparation

Mix the coconut oil, milk, coconut milk and sugar
Keep this mixture aside to be used later
Sift the all purpose flour, salt and baking soda
Add the dry ingredients into the coconut oil-milk mixture slowly
Fold well using a spatula
As eggs aren't added in this recipe, a tablespoon of apple cider vinegar could be added
Add the coconut essence and desiccated coconut as well
Fold well
Grease a 6-inch cake tin with oil
Pour the batter into the greased oven
Bake for 40-45 minutes at 180 degree Celsius
Decorate the coconut cake as you wish.
