A mimic of the refreshing Spanish gazpacho, this tender coconut soup is the coolest thing you can serve this summer, both literally and figuratively. Made by pureeing coconut flesh, basic and cilantro leaves, this cold soup soothes your body as well as assist the digestion process.
Ingredients
1 tender coconut
1 lemon
2 garlic cloves
1 inch piece of ginger
A handful of basil leaves
A handful of cilantro
Himalayan salt, as required
Preparation
Break the tender coconut
Pour coconut water to a bowl
Peel the flesh off the coconut and add it to the bowl
Add rest of the ingredients to it
Puree them using a blender
Serve cold
