'Angamaly Diaries' special Muttakkappa

In the recent Malayalam movie Angamaly Diaries, the protagonist reminisces that his first love was like the 'hit combination' Kappayum Muttayum, typical Angamaly style. And once you have tasted this unique Muttakappa, you cannot blame him. Muttakkappa is mashed tapioca with eggs. But when made in the Angamaly style, it takes you a step closer to gastronomic heaven.

Ingredients
1/2 kg tapioca
1/4 tsp turmeric powder
3 garlic cloves
3 shallots
1 inch piece of ginger
A handful of dried chilies
Salt as required
4 tbsp coconut oil
1/2 tsp mustard seeds
2 onions
2 green chilies
1 sprig curry leaves
2 eggs
1/4 tsp pepper powder

Preparation
Chop tapioca into square pieces
Cook with salt and turmeric powder
Drain and set aside
Crush garlic, shallots, ginger and dried chilies and st aside
Heat oil in a pan and splutter mustard seeds in it
Add the crushed mixture to it
Add chopped onions, green chilies and curry leaves to the pan, saute well
When the onions turn light brown, add the cooked tapioca and mix well
Break the eggs to it
Add salt and pepper, mix well
When the egg is cooked, pour in some coconut oil
Mix well and and serve
It is best served with tomato chutney.
