Beetroot soup

A super healthy warm soup that boosts your immune system during the monsoons. A great recipe for the season of Karkidakam, this soup is a refreshing alternative to the regular soups.

Ingredients
2 beetroot
1 tomato
A pinch of coriander powder
A pinch of turmeric powder
A sprig of coriander leaves
Rock salt, as required
2-3 peppercorn
2 clove
A small piece of cinnamon
2 bay leaves
A small piece of ginger

Preparation
Cut the beetroot into large pieces
Cook the beetroot with turmeric powder and coriander powder in 1 ½ cup water
Add the tomato to the cooked beetroot
Also add the cloves, peppercorn, rock salt, cinnamon and bay leaves
Add a little piece of ginger
Boil all of the ingredients together for 10 minutes
Once done, let it cool down
When it's only slightly warm, pass it on to the mixer and blend all of the ingredients well
Pass the soup into a bowl
Add a dash of fresh cream and some coriander leaves
