Chocolate mousse on chocolate cake

If you can bake a chocolate cake, learn to make a ravishing topping of chocolate mousse. Perfect for the Christmas season, the kids in the house will just love it!

Ingredients
Chocolate cake, to make a lining on the baking plate
½ cup slightly sweetened orange juice
300gm milk chocolate
50gm butter (unsalted)
Egg yolks from three eggs
1 tsp coffee essence
Or 1 tbsp strong black coffee
Egg whites from three eggs
¼ cup icing sugar
300mg thick cream, beaten

Preparation
Lay the chocolate cake on the dish. Pour orange juice over it and rest the cake to soak it up
Put chocolate and butter cubes together in a bowl
Melt it by placing inside microwave oven or temper the chocolate by putting the pieces in a bowl and immersing the bowl in hot water. Stir until it becomes very soft
Mix the egg yolks one by one and beat together. Add coffee and stir. Remove to a large bowl and keep to cool
Beat egg whites well. When it becomes fluffy and stiff, beat again after adding one tsp icing sugar a little at a time
Take care to dissolve the icing sugar by beating well after adding it each time
Add cream gently to the chocolate mixture and mix them. Add the beaten egg white and sugar mixture gently in two installments and fold well
Pour this mixture gently over the soaked cake. Cover the plate and keep in fridge for setting
Garnish with grated chocolate, cream or nuts
