Vishu kanji

The customary porridge served on the auspicious day of Vishu, Vishukanji sets the mood for the eventful day

½ kg rice
300g green gram, de-husked
First and second milk from two coconuts
Salt to taste

Wash and strain rice
Fry green gram lightly
Mix rice and gram and cook in second milk of coconut
When the rice has cooked and the mixture has thickened, remove from flame
Add first milk of coconut
Add salt when serving
