Easy prawn roast in just half an hour

Freshwater prawns are abundantly farmed in Kerala, especially across the coastal belt. Fresh and juicy prawns have a distinct texture and flavour which suits all kinds of cuisines. Here is a recipe of delicious prawn roast which can be relished with rice, tapioca or chapathi.

Ingredients
500 gm prawn/shrimp (cleaned and shelled)
15 shallots (chopped)
5 - 10 green chilli
50 gm ginger (finely chopped)
50 gm garlic (finely chopped)
Curry leaves
150 gm tomato (diced)
2 tbsp chilli powder
1 tbsp coriander powder
1 tbsp pepper powder
1/4 tbsp turmeric powder
1/4 tbsp garam masala
4 - 5 tbsp tamarind water
100 ml coconut oil
Salt as per taste

Preparation
Heat oil in a wok (kadai)
Sauté the chopped shallots, green chillies, ginger, garlic and curry leaves for 10 - 12 minutes
Add chilli powder, coriander powder, turmeric and garam masala
Mix it well
Add the tomatoes and cook for a while
Pour a little bit of water into this mixture
Add the cleaned prawn/shrimp and tamarind water
Cook for 10 minutes with the lid on
The tasty prawn roast is ready
