This broccoli stir fry helps ward off diseases

Broccoli

Broccoli is known for its antioxidant and immunity-boosting properties. Add that to the medicinal coconut and lime, and you have a dish that will instantly boost your health. This tangy stir-fry has many flavoured balanced to give you a perfect treat!

Ingredients
800g thin-stemmed broccoli
6 tbsp coconut oil
3½ tsp mustard seeds
3 tbsp fresh or dried curry leaves
Pinch of chilli flakes
4 red onions, thickly sliced
100g ginger, shredded
100g fresh or frozen grated coconut
juice from 2 limes

Preparation
Heat the oil in a large wok or saucepan set over a medium heat
Toss in the mustard seeds followed by the curry leaves (if you are using dried curry leaves add them later on with the broccoli) and chilli flakes
When the leaves stop spluttering, add the onions and ginger and fry for 3-4 mins over high heat
Stir in the broccoli (and dried curry leaves, if using) and continue frying over high heat until just tender, stirring all the time
Scatter over the coconut stir to mix and sharpen with the lime juice
