Oats unniyappam – a twist to your favourite tea partner

Oatmeal, which is widely believed unavoidable in a healthy diet, has become very common in the Malayali meal plans. Here is a fusion recipe that incorporates oats in the Kerala kitchen.

Ingredients
1 cup oats
½ cup semolina
1 tbsp all purpose flour (maida)
½ coconut (grated)
¼ tbsp baking soda
1 banana
Jaggery syrup as required
Cardamom powder as required
Oil to fry

Preparation
Mix the oats and semolina, and soak in warm water to soften it
Add the Mysore banana in the grated coconut
Mix well
Add the jaggery syrup, all purpose flour (maida), soaked oats and semolina and baking soda
Mix well and keep aside for at least an hour
Add the cardamom powder
In an unniyappam vessel, pour some oil
When the oil gets hot, pour a spoonful of batter
When the unniyappan begins to separate from the holes in the vessel, flip it
Fry until all the sides are crisp
Place on paper towels to remove extra oil
