French Jambalaya is a complete meal


Jambalaya is a popular Spanish-French dish loaded with vegetables, rice, and meat. It is a complete meal which is spicy and flavoursome.

1 cup bacon strips
1 tsp garlic (finely chopped)
2 tsp celery (finely chopped)
1 white onion
1 bay leaf
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
3 green chillies
1 cup chicken (cooked and shredded)
2 cups sausage
2 cups tomatoes
1 tbsp Worcestershire sauce
1 tbsp hot sauce
500 ml chicken stock
250 gms basmati rice
1 tsp chilli flakes
2 tbsp Cajun seasoning
1 tsp dried thyme
1 tsp salt
1 tsp crushed black pepper
1 cup white prawns
1 cup spring onions

Heat olive oil in a pan
Add the bacon strips and fry
Add the finely chopped garlic, celery, and onions
Stir well
Add the bay leaf, diced red, yellow and green bell peppers and green chillies
Sauté well
Add the shredded chicken and sausages
Cook well
Add cooked and diced tomatoes into it
Stir well
Add the Worcestershire sauce, hot sauce, and chicken stock
Boil well
Add the washed basmati rice, chilli flakes, Cajun seasoning, and dried thyme, salt and crushed black pepper
Cook for at least 20 minutes with the lid on
Stir in intervals
Add white prawns and cook for 10 more minutes with the lid on
Serve hot by garnishing with chopped spring onion.
