Sandwiched orange sponge cake

This Christmas, show off your baking skills by making a delicious sandwiched orange sponge cake. A hint of tanginess from the fresh orange juice and zest add the perfect flavour balance. The delicious filling and the beautiful frosting complete the cake. 

Ingredients
For the sponge:
3 egg whites
A pinch of cream of tartar
3 egg yolks
1 cup sugar
½ cup orange juice
2 tbsp orange zest
1 ½ cups all purpose flour (maida)
1 ½ tsp baking powder
A pinch of salt
For the filling:
½ cup sugar
2 tbsp all purpose flour 
A pinch of salt
2 egg yolks
2 tbsp butter
1 tsp lemon juice
For the frosting
4 tbsp warm milk
1 tbsp orange/lime essence
3 cups icing sugar
Orange zest to decorate

Preparations
Pre-heat the oven to 180°C
In a bowl add the egg whites and cream of tartar
Beat it well until the egg whites are firm
Add the egg yolks each one at a time and beat well
Add the sugar slowly and keep beating the mixture
Add the orange juice and zest and beat again
Pass the all purpose flour, baking powder and salt through a sieve together
Add it slowly into the mixture and mix well using a spatula
Pour this cake batter into a greased cake tin and bake it in the pre-heated batter
Bake it in two batches or a tall one which could be cut into two
To make the filling, add sugar, all purpose flour, salt, egg yolks, and butter in a bowl
Beat and mix it well by holding the bowl over boiling water
Add the lemon juice when the filling has been cooled down 
For the frosting, add the orange/lime essence into warm milk
Add the icing sugar and fold it until it is the right consistency
Spread the filling on top of the first layer of the sponge cake
Place the second layer of sponge cake on top of it
Cover the cake with the frosting 
Decorate with orange zest.
