Mathanga pradhaman

Rich in antioxidants and vitamins, pumpkins are great to make savoury and sweet dishes. This Onam, try this delicious pumpkin payasam which is sweet, fragrant, and nutritious as well.

200 gm pumpkin
4 tbsp ghee
400 gm melted jaggery (or as per taste)
1 coconut
1 cup first extract of coconut milk
1 cup second extract of coconut milk
1 cup third extract of coconut milk
¼ tsp cumin powder
¼ tsp dried ginger powder
¼ tsp cardamom powder
2 tbsp ghee
1 tbsp coconut shards
1 tbsp raisins
1 tbsp cashews

Remove the skin of the pumpkin and cook it until nice and soft
Now, grind the cooked pumpkin into fine paste
Heat ghee in a thick bottomed vessel and sauté the pumpkin paste
When the pumpkin is half done, add the melted jaggery
Put the flame on simmer and stir continuously without the mixture sticking onto the bottom of the vessel
When it begins to thicken up add the third extract of coconut milk and stir until it thickens nicely
Now add the second extract of coconut milk and allow it boil well
Into it add the first extract of coconut milk and give it a good mix
Add the cumin powder, dried ginger powder and cardamom powder before the payasam boils
Mix well
Heat ghee in a pan and fry the coconut shards, raisins and cashews
Garnish the pumpkin payasam with these and serve hot.
