Crunchy kuzhalappam probably is Keralites’ favourite snack to enjoy with hot black tea. Even though it is tasty, people hardly make kuzhalappam at home as it is quite difficult. Check out this relatively easier recipe to make tasty and crunchy kuzhalappam at your home.

Ingredients

400 gm rice powder

2 ¼ cups of water

Salt as required

½ cup grated coconut

6 shallots

½ tsp cumin

1 tsp sesame seeds

Coconut oil

Oil to fry

Preparation

If the rice powder is store bought, then toast it for 2-3 minutes before cooking

Boil some water in a pan with some salt

Grind the grated coconut with shallots and garlic in a mixer jar to a coarse paste

Add this paste into the boiling water

Boil for 2 minutes

Mix cumin seeds and sesame seeds in the toasted rice powder

Pour the hot coconut mix water into the rice powder

Using a spatula, mix swiftly

Make sure not to use too much water (around 2 ½ cups water has been used in this recipe)

Now mix using your hands

Keep the dough aside for at least half an hour

After half an hour, mix again

Scoop some dough and shape it into a cylinder

To shape the dough, rub some coconut oil on a plantain leaf

Spread the dough into not too thin patties

Roll this into cylinders using a rolling pin

Seal the ends carefully

Now, remove the rolling pin slowly without losing the shape of the dough

Fry the kuzhalappam in hot oil

The snack would taste amazing if fried in fresh coconut oil

Make sure that the oil is hot before adding the kuzhalappam

Lower the flame to medium after a few seconds

Flip and cook all sides

Take out the kuzhalappam after it has turned brown and crunchy

Tasty homemade kuzhalappam is ready to serve.
