Pack a healthy lunch with Spanish omelette

Loaded with vegetables, the Spanish omelette is a complete meal which is delicious and nutritious. It is an ideal dish to be served for breakfast, lunch, or dinner. Spanish omelette could be packed for lunch by rolling it in a chapathi.

Ingredients
1 tbsp butter
1 tbsp onions (finely chopped)
50 gms green peas (cooked and crumbled)
2 tbsp tomatoes (finely chopped)
1 tbsp capsicum (finely chopped)
1 tsp coriander leaves (chopped)
1 tsp bread crumbs
1 egg
Salt as required 
Pepper as required
Coriander leaves to garnish

Preparation
Heat butter in a pan
Add the finely chopped onions and sauté well
Add the crumbled green peas, tomatoes, capsicum, coriander leaves, and bread crumbs
Beat the egg with salt and pepper
Add the sautéed ingredients and mix well
Pour the egg mixture on a heated tawa and cook both sides
Garnish with coriander leaves
Tastes best when served hot.
