Curry in a hurry

Everybody is looking for quick and easy recipes to make on the go. Who has the time to spend hours in the kitchen when you have places to be and things to do?

That is, however, not a good enough reason to compromise on taste. This recipe is your shortcut to that perfect chicken curry that goes with rice and roti and can be packed for lunch. Here is 'curry in a hurry!'

Ingredients
500 gm boneless chicken
For marinade:
1 tsp chilli powder
½ tsp roasted cumin powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp salt
2 tsp vegetable oil
For curry:
2 cups finely chopped onion
2 tbsp chopped garlic
2 tbsp tamarind sauce
1 cup yogurt
2 tsp garam masala
1 tsp cumin powder
1 tsp turmeric powder
1 tsp coriander powder
1 tsp paprika powder
Oil, as needed

Preparation
Marinade the chicken in the mentioned ingredients for 20 mins
Heat oil in a deep pan
Sauté garlic till brown
Add onions and cook till soft, then leave to cool
Blend all remaining ingredients and cooked garlic, onions in a mixer
Layer the chicken in a baking dish
Pour the freshly ground paste over it
Pre-heat the oven to 200°C
Bake for 25 mins at 175°C
Garnish and serve.
